THICKENER
  • Gelatin2 tsp powdered gelatin (or 1 sheet leaf gelatin)

  • Lemon juice1 lemon, fresh
  • Sugar2-3 tbsp caster sugar

Prepare mango puree
Peel and pit mangoes, rough chop flesh, blend until completely smooth, pass through fine sieve for silky texture

Bloom gelatin
Sprinkle gelatin over 3 tbsp cold water, let sit 5 minutes until spongy and softened

Warm mango base
Gently warm mango puree with sugar over low heat until steaming (don't boil), stir until sugar dissolves
